Sausage and Rice Casserole

This family recipe came from a Boy Scout troop who made it when they were camping out in the woods. It’s that simple (and there’s only 4 ingredients!) The seasoning from the sausage makes it delicious, requiring no salt or extra ingredients, so be picky about the sausage. Fall is here. ‘Tis the season for EASY comfort food. The older we get, the more our minds tend to fade.  You can deny this all you want, but if we’re not using our brains constantly, then we start to lose our mind, so to speak. This game wasn't my favorite, but there are some other games that are so much fun, I couldn't stop playing! What I like about it is its simple, easy to memorize and it has two different kinds of beans in it.  What a great way to get your fiber. Comforting Chicken Shepard's Pie

This is a delicious twist to the old version of Shepard's Pie. There is nothing like a comforting dish on a cool day. And this is definitely comfort food with the hot mashed potatoes and gravy, chicken and cheddar cheese. 

Apple and Spice and Everything Nice Muffins

This muffin is delicious for breakfast, a snack or anytime of the day. When apples are in season during the fall, it’s great to make this muffin and eat it with warm apple cider. Imagine breaking open a piping hot muffin and eating it with a dollop of butter (or a healthy spread. Whatever you prefer.)  Yummy!


Teaching Kids the Golden Rule
